These mini portobello pizzas blend the richness of grilled chicken and parmesan with the freshness of arugula and the tanginess of cherry tomatoes, all enhanced by Biora's Kombucha Caesar dressing. A perfect creative meal or a unique appetizer!

4 large portobello mushrooms, stemmed and hollowed out
- 1 cup of grilled chicken, sliced into strips

1/2 cup of grated parmesan cheese
- 1 cup of fresh arugula
- 1/2 cup of cherry tomatoes, halved

Extra virgin olive oil
- Salt and pepper, to taste
Directions
Preheat your oven to 200°C (400°F).
Lightly brush the mushrooms with olive oil and season with salt and pepper. Place them on a baking sheet lined with parchment paper.
Distribute the grilled chicken strips, cherry tomatoes, and a generous amount of Parmesan cheese over each mushroom. Drizzle lightly with Biora Kombucha Caesar Dressing.
Place the garnished mushrooms in the oven for about 10 minutes, or until the cheese is melted and slightly golden.
Upon removing from the oven, add a handful of fresh arugula to each mini pizza.
Serve your mini Portobello pizzas hot, drizzled with an extra splash of Caesar dressing if desired.
