Ingredients / Ingrédients
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 4 cups chopped romaine lettuce
- 1 cup canned black beans, rinsed and drained
- 1 cup sweet corn kernels (canned or frozen and thawed)
- 1 large avocado, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup shredded cheddar cheese
- 1/4 cup red onion, finely chopped
- Tortilla chips, for serving (optional)
- Fresh cilantro, for garnish
- Lime wedges, for serving
Directions
In a bowl, combine olive oil, chili powder, paprika, salt, and pepper. Add chicken breasts and coat evenly with the spice mix. Let marinate for at least 10 minutes.
Heat a grill pan over medium-high heat. Grill the chicken for 5-6 minutes on each side or until fully cooked through. Remove from heat, let rest for a few minutes, then slice into strips.
In a large bowl, toss the chopped romaine lettuce with black beans, corn, cherry tomatoes, red onion, and half of the Ranch dressing.
Distribute the salad among four plates. Top each with sliced grilled chicken, diced avocado, shredded cheese, and more Ranch dressing as desired.
Sprinkle with crushed tortilla chips and fresh cilantro. Serve with lime wedges on the side.
