This balsamic salad is a perfect blend of the sweetness from caramelized pears, the acidity of strawberries, the crunchiness of pecans, and the richness of feta cheese, all tied together with a kombucha balsamic dressing. A sophisticated and refreshing dish ideal for a starter or a light meal.

- 150g mixed greens (arugula, spinach, mesclun)
- 2 firm pears, cut into quarters
- 1/2 cup pecans, lightly toasted
- 1/2 cup strawberries, sliced
- 100g feta cheese, crumbled
- 2 tablespoons honey
- 1 tablespoon vegetable butter
- Salt and pepper to taste
Directions
In a skillet, melt the vegetable butter and add the honey. When the mixture begins to bubble, add the pear quarters. Roast the pears for about 5 minutes on each side, until they are golden and caramelized. Remove from heat.
Arrange the mixed greens in a large salad bowl.
Add the roasted pears, sliced strawberries, toasted pecans, and crumbled feta cheese.
Drizzle with the kombucha balsamic dressing.
Season with salt and pepper, and gently toss the salad to evenly coat all the ingredients.
Serve immediately, ideally while the pears are still warm.
