- 2 large cucumbers
- 1 ripe avocado
- 100g soft goat cheese
- 100g tofu spread
- 1/4 cup Kombucha Caesar Dressing
- 1/2 cup cherry tomatoes, halved
- 1/4 cup sesame seeds
- Fresh basil leaves for garnish
- Lemon juice (to prevent avocado from browning)
- Salt and pepper to taste
Directions
Wash the cucumbers and use a mandoline or vegetable peeler to slice them into long, thin strips.
Peel and slice the avocado into thin slices, and drizzle with lemon juice to prevent browning.
On a clean surface, lay out a strip of cucumber. At one end, spread a thin layer of tofu spread.
Place a few slices of avocado and a sprinkle of crumbled goat cheese on top of the tofu spread.
Add a few halves of cherry tomatoes and sprinkle with sesame seeds.
Season with salt and pepper.
Drizzle some Kombucha Caesar Dressing over the toppings.
Carefully roll the cucumber around the filling to form a roll. Use a toothpick to secure the roll if necessary.
Repeat with the remaining cucumber strips and filling.
Arrange the rolls on a serving platter and garnish with fresh basil leaves.
