Ingredients / Ingrédients
- 2 large sweet potatoes, washed and sliced into 1 cm thick rounds
- 100 g feta cheese, crumbled
- 1/2 cup black olives, pitted and sliced
- 1/2 cup cherry tomatoes, halved
- 1/2 cup arugula or microgreens
- Guacamole
- Olive oil for cooking
- Salt and pepper to taste
Directions
Preheat your oven to 200°C (400°F). Place the sweet potato slices on a baking sheet lined with parchment paper. Lightly brush them with olive oil and season with salt and pepper. Bake for about 25 minutes or until they are tender and lightly golden, turning halfway through.
Once the sweet potato rounds are cooked and slightly cooled, arrange them on a serving dish. Evenly spread guacamole and crumbled feta cheese on each round.
Scatter the sliced black olives and cherry tomato halves over the toasts.
Add a small handful of arugula or microgreens on top to add color and a bit of freshness.
Generously drizzle each toast with Biora’s Green Goddess Dressing before serving to incorporate a herbaceous and refreshing flavor.
