- 4 large ripe tomatoes
- 2 ripe avocados
- 1/2 cup corn
- 1/4 cup chickpeas
- 1 small red onion, finely chopped
- 2 tablespoons fresh cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste
- Pinch of paprika

Biora’s Kombucha Green Goddess Dressing
Directions
Wash the tomatoes thoroughly. Cut the tops off and carefully hollow out the insides, removing seeds and pulp. Lightly salt the inside of the tomatoes and place them upside down on a paper towel to drain excess moisture.
In a bowl, mash the avocado flesh. Add lime juice to prevent oxidation. Mix in the corn, chickpeas, red onion, and chopped cilantro.
Season the mixture with salt, pepper, and a pinch of paprika. Add enough Kombucha Green Goddess Dressing to lightly coat the mixture.
Fill the tomatoes with the avocado mixture. Replace the tops of the tomatoes to cover.
Serve immediately or refrigerate before serving to allow the flavors to meld.
