This crispy and hearty kombucha caesar panko chicken is a perfect wintertime dish. Its warming and comforting qualities make it an ideal meal for chilly evenings. - 4 chicken breasts
- Salt and pepper to taste
1 cup of Biora's kombucha Caesar dressing
- 1 cup all-purpose flour
- 2 cups Panko breadcrumbs
- Frying oil, enough for shallow frying
- 1 cup white rice, cooked according to package instructions
- 1 cup cherry tomatoes, halved
- 4 lemon wedges for garnish
- A few leaves of romaine lettuce, washed and dried
Preheat the oven to 400°F (200°C).
Season the chicken breasts with salt and pepper.
Set up three shallow plates: pour the Biora's kombucha Caesar dressing into the first; place the all-purpose flour into the second; spread the Panko breadcrumbs into the third.
Dip each chicken breast into the Caesar dressing, making sure it's well coated.
Then coat the chicken in the flour, covering it completely.
Dip again into the Caesar dressing, and finally, cover it entirely with the Panko breadcrumbs.
Heat the oil in a pan over medium-high heat. Fry the chicken for about 15 to 20 seconds on each side, just until the breadcrumbs are golden brown.
Transfer the chicken to a baking tray and bake for about 15 minutes, or until the chicken is fully cooked inside.
While the chicken is cooking, prepare the white rice and mix it with the halved cherry tomatoes.
Make a bed of rice. Arrange the romaine lettuce leaves and tomatoes, then place the fried chicken on top.
Garnish with lemon wedges and serve immediately.
