This kale and quinoa caesar salad is the perfect blend of textures and flavors. The kale provides a crunchy base, while quinoa adds satisfying heartiness. Creamy caesar dressing and shaved parmesan cheese add an irresistible richness, making this salad a healthy and flavorful choice for any meal.

- 200g of kale, finely chopped
- 1 cup of quinoa
- 2 cups of water
- 1/2 cup of parmesan shavings
- 1 cup of homemade croutons
- 1 cucumber, cut into quarter slices

1/2 cup of Biora’s Kombucha Caesar dressing
- Salt and pepper to taste
- Juice of 1/2 lemon (optional for added freshness)
Directions
Rinse the quinoa under cold water. Bring 2 cups of water to a boil in a saucepan, add the quinoa, reduce heat, cover, and simmer until the quinoa is tender and the water is absorbed, about 15 minutes. Let cool.
While the quinoa is cooking, wash and chop the kale. Place in a large salad bowl.
Add the cooled quinoa, parmesan shavings, homemade croutons, and quarter-sliced cucumber to the kale.
Drizzle with Biora’s Kombucha Caesar dressing and mix well to coat all ingredients. Season with salt and pepper, and add a bit of lemon juice if desired.
Serve the salad immediately, or let it sit in the refrigerator for an hour to allow the flavors to meld together.
